So Much Blogging...So Little Time!

I have fallen SO far behind in my blogging. It has been a busy 2 months with lots of family visiting. Someday I plan to print my blog into a book so I want to make sure I capture all of our precious memories with family.

So...I will rewind to March!

We live thousands of miles away from our parents, so we always look forward to our visits with them. This one was extra special because Mom & Mike came with my Grandma and Grandpa! They drove half way across the country to stay with us and other family and friends along the way.

Of course, the boys were thrilled to have 4 grandparents to love on and receive lots of attention from!

Bryce and Drew were well behaved and fairly calm. They just enjoyed crawling up in everyones' laps to read books, play with puzzles and watch tv!

We enjoyed a few shows in Branson together

We also got to celebrate Mom's birthday with a little sweet treat from TCBY!

And, we were so excited they got to join us for the boys' 3rd birthday party. I think everyone had fun!



Bryce and Drew loved their Diego hop balls from Great-Grandma and Great-Grandpa!

Family Food Faves

This is a "keeper!" A pretty pasta dish for summer.

Lemon Chicken Spaghetti
Ingredients:
1 pound boneless skinless chicken breasts, cut into strips (I dice it)
2 green onions, chopped
2 garlic cloves, minced
2 tablespoons olive oil
1 cup chicken broth
1/2 cup heavy whipping cream
8 ounces uncooked thin spaghetti or angel hair pasta 1 cup frozen peas
1/2 cup chopped seeded tomatoes
1/2 cup shredded Parmesan cheese
2 tablespoon grated lemon peel
1/8 teaspoon lemon-pepper seasoning (I omitted)
Directions:
In a large skillet, saute chicken, onions and garlic in oil until chicken is no longer pink. Remove chicken with a slotted spoon; keep warm. Add broth to the skillet; bring to a boil and cook until reduced by half. Reduce heat; add cream. Cook and stir for 5 minutes. Cook spaghetti according to package directions. Add peas, tomatoes, Parmesan cheese and chicken to the cream mixture; heat through. Drain spaghetti; toss with chicken mixture. Sprinkle with lemon peel and lemon-pepper. Yield: 6-8 servings.

Mother's Day 2009

I had a wonderful Mother's Day today.

Jimmy had planned to make me breakfast in bed...with the boys' help! As I was laying in bed trying to rest, I could hear that Jimmy was frustrated and having a bit of a struggle trying to make blueberry pancakes, bacon and fruit with the boys! So, I got up to help him out. The breakfast was yummy even if it did take him an hour to make the pancakes! Thank you honey!

Then we went to church together and out for Mexican food with some friends.

Bryce and Drew wanted to take a nap with me today so I let them talk me into it...twist my arm!

After naps we spent lots of time together just reading books, doing puzzles and playing together. Tonight we got on the web cam to wish our Mom's a Happy Mother's Day. And then the boys gave me a sweet homemade card and a gift card for a massage. I can't wait to get that scheduled!

Papa Rick & Gammie

My Dad and Shari are on their way here from Seattle. They are driving and should be here tonight for dinner. We are all looking forward to our visit, especially the boys. We haven't seen them since last May! I think they will be amazed at how much they have grown!


I am resorting to bribery. I told Bryce and Drew that if they don't have a good nap, Papa and Gammie are not going to come! We'll see how it works!
