Zucchini Bread

Several friends have given us zucchini fresh from their garden. This morning I tried a new recipe for a lower fat zucchini bread.  It is delicious!  I think I'll bake several loaves and freeze for school snacks & lunches.


Low Fat Healthy Zucchini Bread

Directions:
Preheat oven to 350.


  1. Mix dry ingredients.
  2. Mix wet ingredients.
  3. Combine.
  4. Add to greased (I use cooking spray) bread pan.
  5. Bake for 40-45 minutes or until knife comes out clean.

My Scientists!


Bryce & Drew are loving their microscopes they got from Papa Rick & Gammie for their birthday.  Funny what spiders, ants, moldy bread, hairs from Daddy's leg and boogers look like under the scope!  The search is on for more disgusting objects!  Never a dull moment with twin boys!

Happy 6th Birthday!

Bryce & Drew wanted to have a baseball cake and play games with their friends for their 6th birthday. 6 friends joined us at "Richardson Field" for a fun afternoon of games, prizes and concession-type food!


We had popcorn, peanuts, cracker jacks & lemonade for snacks.




It started off sunny & hot, so when the kids arrived, they blasted each other with water guns until everyone was soaked! 

Then we played pin the ball in the mitt, twirl around the bat, pitching contest, balloon stomp, tug-a-war and hot potato with an inflatable baseball.  It started to rain so we came inside for hot dogs & fruit, cake & ice cream, and gifts.  The the boys went wild with nerf gun fights!  CRAZY!!!

Unfortunately, I never got a group picture!  I was too busy keeping track of 8 little kids!
Everyone got to take home a goodie bag that had Big League Gum, sunflower seeds, baseball trading cards, baseball tattoos & a baseball yo-yo.  I think everyone "Had a Ball!"

One more reason I'm thankful that I have twins...I ONLY HAVE TO PLAN 1 BIRTHDAY PARTY PER YEAR!!!

Our Birthday Surprise

Jimmy had been working for several days on a "landscaping project" to prepare Bryce & Drew's birthday surprise.  Before school on Friday they each opened up a new basketball and went out to the driveway to try them out when they saw this...

They were both super excited and shot hoops up until the minute they had to leave for school!  The night before, we put the boys to bed and then came out in the dark to put it together. 3 very sweet & generous neighbors came over to help us and stayed until 11pm!  We are so blessed!


Great gift idea, Jimmy!  This will provide lots of family fun, good exercise and great memories for years to come!

The Twin Bond

I am continually amazed at the tight bond that Bryce & Drew share.  These 2 little boys love each other like crazy.  They love to be together.  They still sleep in the same bed (even though they have their own rooms) & still take baths together. When watching tv, I ususally find them snuggled up on the couch together.  Jimmy and I pray that they will always remain "best fwends" and protect one another. 

I'm so thankful that God chose us to love & raise twins.  It is such a special relationship and an awesome blessing & honor!  I just love watching these two grow up together!

In His Element!

Bryce got home from school today and noticed that his car was covered in the nice layer of yellow, Georgia, springtime pollen.  It really bothered him, so he decided to wash it with Jimmy's new power washer!  

This boy loves to work and to keep things clean!  Notice the smile ear-to-ear!  He is SO in his element!

The Orioles

Bryce & Drew just started their 2nd season of baseball. Jimmy pulled up a MLB website and told the boys to each pick out a jersey that they like. To be fair, I chose a number between 1-100 and Drew picked the closest number. His favorite color is orange so he chose The Orioles!  Being the coach's kid has its benefits!

Winter Break

Bryce & Drew are on Winter Break this week.  Papa Jim was able to fly down to spend the week with us, but unfortunately, Nana had to work. The highlight of our week was going to The Raccoon Mountain Caverns in Chattanooga, TN. 

It's a good thing I didn't really understand what I was getting us in to, because I probably wouldn't have gone!
We wore helmets with flashlights, knee pads & gloves.

We went on a 2 hour tour climbing rocks
We pulled ourselves up rocks with ropes

We repelled down rocks




We slid down rocks on our rear ends

We belly crawled through tiny tunnels that were only 1 1/2 feet tall (this was NOT fun!)
And even walked across 12 inch wide suspended bridges!  Can you see the fear in my face?

We learned a lot about geology and even got to see bats & salamanders! We got wet & muddy and it was scary at times, but overall it was an awesome adventure & experience.  I'm so glad we did it.  Bryce & Drew did amazingly well and want to go again!
